Jana's Stacked Bells
Considering how many different ways a bell pepper can be used to create a delicious snack or meal, they truly can be considered an enchanted vegetable. This wizardly concoction comes from Jana, head chef at Wizard Maze Farm and everyone comes to the table when she cooks up a batch of these for farm crew. It's easy and simple to make.
Here's how Jana makes them:
2 red and 2 yellow bell peppers
2 packages of Italian sausage meat
1 large tomato, sliced into eight slices
1 package of ricotta cheese
1 package of fresh spinach, cut into smaller strips
1 red onion sliced, chopped into small pieces
2 - 3 cloves of fresh garlic, chopped into small pieces
Olive oil
Pepper jack cheese
Cut your bell peppers in half and clean them. Place them on a baking sheet, brush with olive oil, and toast them under a broiler. Flip the bell peppers when toasted, toast on the other side. Remove from oven.
Fry the Italian sausage, then set it aside. Fry onions, garlic, and spinach in olive oil, then set aside. Crumble your ricotta cheese in the base of the peppers. Next, spoon in the Italian sausage meat, then spoon in spinach with onions and garlic, then one slice of tomato, and cover with a slice of pepper jack cheese.
Bake in the oven for 15 - 20 minutes at 400 degrees.
