All year long, I've been making dishes using the Hatch green chilis my college roommate and I processed last summer. Everything from chilis, tomatoes and queso dip to chili rellenos and these things which are sort of a crispy corn tortilla and chicken quesadilla.
If I had folded the tortillas the dish would have been tacos.
